A good dessert to close a "tapas" lunch is a cheesecake in a glass. It is very easy to make and very fast, it takes about 10 minutes.
The basis is prepared with crushed cookies. Those are mixed with thawed butter (about 20 seconds in the microwave), and once we have the mixture, you have to put it in the glass and pressure on it. Let it in the fridge some minutes.
Next, in another bol, you have to mix one unit of butter (also previously thawed in the microwave), with half unit of sugar. Afterwards you have to add two and a half units of cream cheese and some tablespoonfuls of lemon juice.
Finally, add this mixture in the glass with the cookies basis, and cover it with jam.
We made it with blueberries jam, lemon cream and pumkin jam, and that's the result!
