Hot Chocolate

Our drink to enjoy a delicious King cake, at the Epiphany, is a hot chocolate.

If you have a chocolate shop near you, we recommend you a warm one, but if not, you can also make it at home, it is very easy.

You need:
1 square of black chocolate for desserts
½ litter of milk

Pour the milk in a pot and add the chocolate cut into pieces, then heat the mixture until the chocolate is completely dissolve.

Finally bring the hot chocolate to a boil and turn off the heat as soon as it starts bubbling.

If you like the thicker chocolate you can also add a little cornstarch up to desired thickness. And if you prefer a soft chocolate, add milk.

Pineapple sorbet with champagne

I like a lot this sorbet to enjoy it in New Year's Eve. It is very refreshing and simple to do.

You need:

50ml lemon juice;
100ml of orange juice;
1 peeled pineapple cut into pieces;
200g sugar; and
Champagne

Grind all ingredients except for the champagne until you have a smooth cream, without lumps.

Pour the cream into the bowl of the mixer and put it in the freezer, stirring every half hour in order to avoid the ice.

Once the mixture is frozen and without ice, beat it to obtain a cream.

Finally pour the mixture into a glass of champagne (about 3/4 parts) and finally poured the champagne (1/3 part), stir the mixture and you will have it ready to serve.

"Manhattan" cocktail

The official story says that the cocktail "Manhattan" was created in New York, at the Club Manhattan in 1874 when Jenny Jerome, who later became Lady Randolph Churchill, mother of Winston Churchill, hosted a party for a friend of his father, Samuel Tilden, who had just been elected governor of the state.

She gave instructions to the barman to create a special cocktail for the occasion. This cocktail liked so much at the party and the audience began to demand it in other bars to become one of the most famous cocktails in the world.

The ingredients are: whisky, Martini rosso and angostura. Garnish it with a red cherry and orange peel.

To drink this cocktail you should start slowly and enjoy it but never let it warm up.

Traffic lights shake

Another of the greatest human inventions has been the traffic light, so on the occasion of the International Inventors' Day, we recommend you to make a traffic light-shake in  honour of two inventors: John Peake Knight, who invented the first manual traffic light in the middle of the nineteenth century, and Ernest Sirrine who improved it by making it automatic.

For this smoothie, full of vitamins, we used fresh strawberries, banana and kiwi: first crushed the strawberries and serve in a glass, let it a few minutes in the fridge in order to increase the consistency. Then add mashed banana, and again let stand a few minutes in the fridge. Finally add the kiwi.
If you prefer a more intense yellow colour, replace the bananas with peaches.

"Brain" shot

The final touch for your Halloween party is a colorful "brain" shot.

Make these shots is pretty simple but not always the desired result is obtained. The ingredients you need are: vodka, grenadine and Baileys.

Mix vodka and grenadine, stir the mixture with a wooden stick and then pour a small amount of Baileys. The result is a shot with a very similar appearance to a brain mass.

Grapes sorbet

It's harvest time and we have been lucky enough to receive several generous bunches of freshly muscatel grapes harvested at Santa Cruz de la Zarza, gift of a great couple of friends.

With those, we prepared a sweet grapes sorbet, which we made as follows: the grapes are peeled, the seeds removed, and finally those are mixed with syrup.

·  To make the syrup, you need: grape juice, lemon juice, water and sugar.
In a saucepan add a litter of grape juice, 150 g sugar, juice of a lemon and a ¼ litter of water. Boil it up to achieve a syrup (about 8 minutes).

·  To make the mixture: In a blender, grind a couple of bunches of grapes peeled and seeded with the syrup. Then put it in a sorbet machine or in the freezer. After a few hours we will have a creamy blend that we can serve in sherbet or champagne glasses.

Mate (infusion)

Mate was drunk since pre-columbian times among Guaraní indigenous people and it was quickly adopted by the Spanish colonizers.

Nowadays, the mate belongs to the cultural heritage of Argentina, Bolivia, Paraguay and Uruguay where it is mainly drunk and also in Brazil and souther Chile.

Here we show you in a simple way how to prepare it:

As it happens with the tea, coffee and chocolate, the mate has a stimulating effect due to the caffeine it contains. Besides, it has also an effect because of the hight amount of water that is used, resulting a digestive infusion.

The mate is very peculiar because it has his own table dishes:
  • the "porongo", which is the main container and it is usually made of gourd;
  • the "bombilla", which is a kind of straw made of metal or wooden with filter;
  • the "pava", which is the thermos;
  • a portable metal assembly that has two containers: one for the mate and the other for the sugar.
Mate is traditionally drunk in a particular social setting, such as family gathering or with friends. Therefore, we propose you to invite your friends to drink Mate at your home.

Here we show you in a simple way how to prepare it:

Queimada

The drink that we recommend you for the night of Saint John is "queimada". This is a Galician drink, of unknown origin although it is attributed a Celtic origin.

It is a warm beverage, which is drunk after pronouncing a spell that protects against spells and move away evil spirits, witches and other evil beings.

It is prepared in a clay pot, where it is added a 1 liter of "orujo" (a galician hard liquor), 120 grams of sugar, lemon (peel and pieces) and a few coffee beans. After, the mixture is stirred.

Then, put on a separate ladle a bit of "orujo" and set it fire, then, slowly, pour the liquid into the clay pot to burn the mixture and stir it until the flame acquires a reddish color and the fire is putting out. It's at this time (still burning) when you must recite the spell. Later serve it.

Following, the spell in English and Galician:

English

Owls, barn owls, toads and witches.
Demons, goblins and devils,
spirits of the misty vales.
Crows, salamanders and witches,
charms of the folk healer(ess).

Rotten pierced canes,
home of worms and vermin.

Wisps of the Holy Company,
evil eye, black witchcraft,
scent of the dead, thunder and lightning.

Howl of the dog, omen of death,
maws of the satyr and foot of the rabbit.

Sinful tongue of the bad woman
married to an old man.

Satan and Beelzebub's Inferno,
fire of the burning corpses,
mutilated bodies of the indecent ones,
farts of the asses of doom,
bellow of the enraged sea.

Useless belly of the unmarried woman,
speech of the cats in heat,
dirty turf of the wicked born goat.

With this bellows I will pump
the flames of this fire
which looks like that from Hell,
and witches will flee,
straddling their brooms,
going to bathe in the beach
of the thick sands.

Hear! Hear the roars
of those that cannot
stop burning in the firewater,
becoming so purified.

And when this beverage
goes down our throats,
we will get free of the evil
of our soul and of any charm.

Forces of air, earth, sea and fire,
to you I make this call:
if it's true that you have more power
than people,
here and now, make the spirits
of the friends who are outside,
take part with us in this Queimada.

Galician

Mouchos, coruxas, sapos e bruxas;
demos, trasnos e diaños;
espíritos das neboadas veigas,
corvos, pintegas e meigas;
rabo ergueito de gato negro
e todos os feitizos das menciñeiras...
Podres cañotas furadas,
fogar de vermes e alimañas,
lume da Santa Compaña,
mal de ollo, negros meigallos;
cheiro dos mortos, tronos e raios;
fuciño de sátiro e pé de coello;
ladrar de raposo, rabiño de martuxa,
oubeo de can, pregoeiro da morte...
Pecadora lingua de mala muller
casada cun home vello;
Averno de Satán e Belcebú,
lume de cadáveres ardentes,
lumes fatuos da noite de San Silvestre,
corpos mutilados dos indecentes,
e peidos dos infernais cus...
Bruar da mar embravecida,
agoiro de naufraxios,
barriga machorra de muller ceibe,
miañar de gatos que andan á xaneira,
guedella porca de cabra mal parida
e cornos retortos de castrón...
Con este cazo
levantarei as chamas deste lume
que se asemella ao do inferno
e as meigas ficarán purificadas
de tódalas súas maldades.
Algunhas fuxirán
a cabalo das súas escobas
para iren se asulagar
no mar de Fisterra.
Ouvide! Escoitade estos ruxidos...!
Son as bruxas que están a purificarse
nestas chamas espiritosas...
E cando este gorentoso brebaxe
baixe polas nosas gorxas,
tamen todos nós quedaremos libres
dos males da nosa alma
e de todo embruxamento.
Forzas do ar, terra, mar e lume!
a vós fago esta chamada:
se é verdade que tendes máis poder
ca humana xente,
limpade de maldades a nosa terra
e facede que aquí e agora
os espiritos dos amigos ausentes
compartan con nós esta queimada.

Drink for summer...Mojito!!

One of the better moments of summer is to enjoy a mojito at a beach bar.
If you are so lucky to live near someone you can go, sure it is already open, and if not, you can do it by yourself. There are many versions, here the more we like:

In a tall glass put lemon, peppermint, brown sugar and white sugar, then squash it all with a mortar.

Then fill the rest of the glass with crushed ice and add equally dark rum and white rum.

Put another glass on the glass with the mixture and shake well.

Finally add soda and you're done!

Caipirinha - Brazil's national cocktail

Brazil's national cocktail is the caipirinha. It is very easy to do and it is great!

You just have to mash into a broad glass two tablespoons of sugar together with a lime cut into pieces, until it releases the juice.

Then add crushed ice, 50ml of cachaça, mix well and voila!
